–Heat broth with lemon zest.  - Always use hot broth for building a risotto to prevent temperature change.

–Clean prawns and remove tails.--Pat dry and season with salt and pepper. -Sear quickly and set a side.

–Toast rice in melted butter. -Add garlic and warm through. -Add lemon juice and wine and let the rice absorb. -Add 1-2 ladles of broth and let simmer until absorbed.

–Once half of the broth has been slowly absorbed, Add chopped asparagus and drained sun dried tomatoes.  -Continue to add broth and simmer on low until fully cooked.

–Add butter and grated parmesan and stir until it is well integrated.

–Add seared prawns and let cook for and additional 2-3 minutes.  -Serve alone or with a simple salad.
