Mix fresh lime juice with olive oil and spices in a small bowl.

Butterfly chicken by slicing it horizontally into two thin pieces.

Peel and clean shrimp by removing the vein. Rinse if needed and place on a paper towel to dry.  Remove tails for easy eating.

Sauté thinly sliced peppers and onions in a hot cast iron skillet.  Cook until onions are translucent. Remove from the pan and place in a bowl for later.

Start grilling meats with the butterflied chicken breast. Sear in the hot skillet and cook for 5-7 minutes on each side. Place on cutting board to rest.

Next, fry steak pieces in the same skillet.  Cook for 4-5 minutes per side to desired doneness. Place on cutting board to rest.

Cook shrimp in the same skillet with all of the marinade for 2-3 minutes total. Turn off the heat and leave shrimp in the pan.

Slice Chicken and Beef into thin strips. Cut against the grain for best results.

Return chicken, steak, peppers and onions to the pan. The hot pan will warm up the meat and vegetables.  Serve with warm tortillas and your favoritefajita toppings.
