Grate zucchini and place them in a large bowl with salt. After 10 minutes, use a towel or paper towels to wring the excess  water out.

This recipe is perfect for using up a leftover baked potato. If you don't have one you can quickly microwave a potato to add to it. Wrap a potato in a damp paper towel and microwave on high for 6-8 minutes. Cool and peel.

Add grated zucchini and a smashed baked potato to a large mixing bowl.  Then, add grated cheese, diced bacon, sour cream, green onions, bread crumbs and an egg.

Mix all of the ingredients together until well combined. Test the batter with your hands to make sure there are no lumps from the potatoes.  Makes sure batter holds together when formed into a patty.

Heat a large skillet on medium-high heat. Coat the bottom of the pan with a thin layer of canola oil. Then, form the batter into 3" x 1/2" patties. Lay in the hot skillet and fry on each side for 3-5  minutes.
