This recipe is perfect for using up a leftover baked potato. If you don't have one you can quickly microwave a potato to add to it.
Wrap a potato in a damp paper towel and microwave on high for 6-8 minutes. Cool and peel.
Heat a large skillet on medium-high heat. Coat the bottom of the pan with a thin layer of canola oil.
Then, form the batter into 3" x 1/2" patties. Lay in the hot skillet and fry on each side for 3-5 minutes.
