Place the fresh parsley, garlic cloves, red onions, lemon juice, olive oil, and spices into a food processor.
Pulse and scrape down the bowl until marinade is well mixed but still coarse.
Place meat and 1/4 of the sauce into a food storage bag and marinate for 30 minutes.
Leave steak out of the fridge to come to room temperature before cooking.
Pre heat a grill or skillet on medium-high heat.
Cook on first side for 5-7 minutes. Turn and cook on the second side until it reaches the desired doneness.
Let meat rest for at least 10 minutes.
Then, slice thin pieces of meat against the grain.
Serve with extra chimichurri sauce.
