Mix together peanut butter, soy sauce, brown sugar, fish sauce, rice vinegar, garlic and ginger.
Whisk together until the brown sugar is dissolved and the sauce is smooth.
Put the chicken thighs in a food storage bag with the satay inspired marinade.
Seal the bag and turn the bag over in your hands to get the sauce all over the chicken thighs.
Place the peanut sauce coated chicken down on the grill and let cook undisturbed for 5-7 minutes.
Turn the well browned chicken thighs over and cook for an additional 5-7 minutes. They should reach an internal temperature of 165° F.
You may need to turn the heat down to medium low to let these finish without burning.
