Beef, Sous Vide

Place steaks into food storage bag or vacuum seal bags. Seal and place in the sous vide bath for 1-4 hours.
My preference is 1.5 inch steaks at 130° for around 2 hours. I like a medium-rare steak that still has a good bite.
Remove steaks from the sous vide. Pat dry with paper towels and season with salt and pepper.
Let rest for 10 minutes before searing.
Heat a skillet on medium-high heat.
Add canola oil to the hot pan and place the steak in the skillet.
Sear on each side to form a nice crust. Finish with butter and garlic.
