Delicious filling and corn tortillas are rolled and air fried to create a crispy Mexican Food favorite. Smothered in our favorite toppings, this easy air fryer recipes is made for weeknight dinners and fun party appetizers.

In a medium bowl, mix together the filling with taco seasoning and set aside until your are ready to fill the corn tortillas.
Soften the corn tortillas. Wrap a small stack of tortillas in a damp paper towel and microwave for 30 seconds. Heating the tortillas makes them soft and pliable.
Next, brush each tortilla front and back with canola oil. You can also use a cooking spray. It is very easy to get a light coating using the oil spray. The canola oil has a high smoke point that won’t burn in the air fryer. It also adds the flavor you would get from deep frying and helps the corn tortilla get crispy on the outside.
To fill, place filling in the center of the corn tortilla and spread from end to end in a thin line. Use about 2 tablespoons of filling per tortilla. Then sprinkle shredded cheese over the filling. Try not to overstuff the tortillas.
Roll the corn tortillas around the filling as tight as possible. Lay rolled taquitos seam side down to keep them closed.
Once you’ve made up all of your taquito rolls, pre-heat the air fryer to 375°F.
Place seam-side down in a single layer in the air fryer basket. Air fry taquitos for 4-6 minutes or until they are golden brown. For best results, do not crowd the air fryer. Cook remaining taquitos in batches using the same method.
Serve with your favorite toppings.
