–Use gentle pressure to peel away the zest from 3 large lemons.

–Warm pine nuts in a dry pan until they start to brown and release a gentle, nutty aroma.

–Pulse lemon peels, pine nuts, sugar, and salt in a food processor until you have the texture of coarse sand.

–Place pesto in a warm pan with olive oil and coarse black pepper.  -Do not simmer.

–Toss cooked pasta, pasta water, and lemon pesto together until you get a creamy sauce.
