Cut an avocado in half and peel away the skin with your hangs.  Slice into thin, even slices.

Peel mangos and cut the fruit away from the pit.  Slice into thin, even pieces.

Take time to slice red onion into extra thin slices. The thin slices will soak in the flavor of the sherry vinegar and add an irresistible sweet and spicy flavor.

Layer slices of mango and avocado on a plate. Top with red onion slices a drizzle of sherry vinegar and a sprinkle of sea salt.
