Perfectly cooked Lo Mein Noodles, thin tender Beef, Broccoli, Carrots, and Green Onions come together in the most flavorful gravy-like sauce. What About the Wok?
Yes, this dish might traditionally be made in a wok or even a big skillet, but we don’t all have extra large cookware. Standard stove top prep can limit the size of our recipe. By using a sheet pan, I was able to make this into a large recipe. It is perfect for a fun dinner party, a growing family, or planned lunch leftovers. Lunch leftovers are the best, if you had actually order Broccoli Beef Lo Mein out, you would definitely have those leftovers for lunch.
You will need a medium sized pot to parboil the noodles. Unfortunately, I haven’t figured out a way to soften noodles in the oven. However, putting the al dente noodles in the oven with all the vegetables and the beef finishes cooking the noodles perfectly, and give some of the noodles a nice crunch. These crispy edges give you the effect of pan frying, again, without a huge wok.
Perfect Broccoli Beef Lo Mein Gravy!?!
In order to coat everything you will need quite a bit of sauce. Mix together soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, garlic, and cornstarch. Cornstarch is the key to the perfect velvety sauce or gravy. As the sauce heats up in the oven, the cornstarch will thicken the sauce and give you that perfect take out style gravy.
A little bit of water, but not watered down.
The recipe does call for a little bit of water. It is important to catch this instruction. You do not add the water to the sauce. If you add this water to the sauce, you will water down the flavor. First, coat all of your ingredients and the sheet pan with the sauce. Add the water to the bottom of the pan right before you put it in the oven. The water will create steam in the oven, and help soften the broccoli and keep the noodles from burning. It will ultimately evaporate and you will be left with an amazing Broccoli Beef Lo Mein.
