I love air fryer recipes. They make less mess than frying and use less heat than turning on the oven. These Crispy Air Fryer Taquitos are easy to put together and delicious with any filling you choose. I often make cheesy chicken filling using leftover chicken or rotisserie chicken for a quick and easy dinner.

Taquitos are a great way to use up leftover chicken or a partial can of beans.
Air frying uses very little oil and is a bit healthier than deep frying.
Ingredients
Corn Tortillas- This is the most important part of a taquito. You can use either white or yellow corn tortillas and fill them with anything that excites you.
Canola Oil- Brushing the tortillas with a light coating of oil will help the tortilla crisp in the air fryer.

Cheesy Chicken Taquitos
1 Cup Shredded Chicken
2 Teaspoons Taco Seasoning
1 Cup Mexican Blend Cheese, shredded
Cheesy Black Bean Taquitos
1 Cup Black Beans drained and rinsed.
2 Teaspoons Taco Seasoning
1 Cup Monterey Jack Cheese, shredded
If you don’t have taco seasoning on hand, mix salt, black pepper, chili powder, garlic powder, and dry parsley for a quick and easy seasoning for your homemade taquitos.

How To Make Air Fryer Taquitos
Step 1
- In a medium bowl, mix together the filling with taco seasoning and set aside until your are ready to fill the corn tortillas.
- Soften the corn tortillas. Wrap a small stack of tortillas in a damp paper towel and microwave for 30 seconds. Heating the tortillas makes them soft and pliable.
Step 2
- Next, brush each tortilla front and back with canola oil. You can also use a cooking spray. It is very easy to get a light coating using the oil spray.
The canola oil has a high smoke point that won’t burn in the air fryer. It also adds the flavor you would get from deep frying and helps the corn tortilla get crispy on the outside.
Step 3
- To fill, place filling in the center of the corn tortilla and spread from end to end in a thin line. Use about 2 tablespoons of filling per tortilla. Then sprinkle shredded cheese over the filling. Try not to overstuff the tortillas.
Step 4
- Roll the corn tortillas around the filling as tight as possible. Lay rolled taquitos seam-side down to keep them closed.
- Once you’ve made up all of your taquito rolls, pre-heat the air fryer to 375°F.
- Place seam-side down in a single layer in the air fryer basket. Air fry taquitos for 4-6 minutes or until they are golden brown. For best results, do not crowd the air fryer. Cook remaining taquitos in batches using the same method.
- Serve with your favorite toppings.
