This list delivers classic Italian soup recipes as well as popular Italian inspired soups that are easy and packed with great flavor. They are perfect for busy weeknights and make great leftovers for easy lunches.
When the temperature starts to drop, it is time to hit the grocery store, stock up on Italian herbs, and bust out your biggest Dutch oven. Whether you crave a rich soup or something on the lighter side, there are easy Italian soup recipes just for you.
What to Serve with Italian Soups
Deli- A tray of Italian deli meats with a variety of cheeses and antipasti are the perfect side for a big pot of soup.
Salad- If you want to keep it simple, you can serve a large green salad with any of these soup recipes to add something cool and crisp to your meal.
Bread- A fresh loaf of bread for soaking up rich, flavorful broth is a must with any delicious soup.
Garlic Bread- I will never say no crusty bread with butter and a few cloves of garlic crushed over the top. This is the perfect addition to light, brothy soup.
Parmesan Cheese- Freshly grated cheese is perfect for sprinkling onto a warm bowl of soup. Melted bits of cheese are a delicious addition.
Red Pepper Flakes- Just a pinch will add a nice spicy punch to any mild soup.
How to Store and Reheat Leftover Soup
Keep soup in an airtight container in the refrigerator for up to 5 days.
It can be frozen for up to 3 months. Save space by storing leftover soup in a plastic storage bag and freeze laying flat. You will able to stack up a few gallons of soup in a small amount of space.
If you cook large batch of soup that calls for pasta, you should boil the pasta to al dente and add it as you serve. Pasta tends to soak up broth, swell, and get soggy when stored in the soup.
Reheat soup by placing in a small sauce pot and bringing it to a low simmer over medium heat.
