Almonds are the everyday snack food of champions, and these barbecue seasoned roasted almonds are the most amazing combination of salty, spicy, and just a bit of sweet. This is my dear husband’s afternoon pick-me-up treat. I make these up in great big batches and then portion then in little sandwich bags so we can grab a perfect portion any time.
I started roasting almonds as a bit of a money-saving challenge. My husband came home from work one day, and he said “I have gone to the gas station every day this week and bought a tin of almonds. It’s getting kind of expensive. Can you make something like the little tins?” My reaction was something along the lines of “Are you crazy! Those tins are like 2 bucks an ounce!!!! I can make almonds that are 10 times better than those little cans!” Exclamations points were very necessary. Making this recipe is a no brainer and great way to take some strain off the snack budget.
A few points about roasted almonds. This is a very quick process, and you need to keep an eye on your oven. Almonds can go from perfectly toasted to a little bit too toasted (burnt) quickly. I also heat my almonds a bit before putting my spices and olive on. This makes sure the almonds are ready to take up the oil and flavor, and that they are already partially toasted so that you don’t burn your dry spices trying to get your almonds toasted just right.
