Sausage Green Bean and Potato Skillet

This Smoked Sausage with potatoes and green beans is a delicious one pan dinner that you can have on the table in 30 minutes. This dish combines fully cooked sausage, creamy potatoes, fresh green beans, peppers, onions, and just the right amount of spice for a filling, flavorful meal.

I keep a few packages of smoked sausage in my fridge to make busy weeknight dinners a bit easier. Using the fully cooked sausage to make a skillet dish keeps it interesting and cuts down on my total cook time. Adding red bell pepper and onions gives this dish rich delicious flavor and some extra bite. Green beans and potatoes make sure that we get a complete meal. 


My whole family loves this easy recipe and I love that it uses simple ingredients and fresh veggies.

Bonus! I only have to wash one pan!

Smoked Sausage, Potato, and Green Bean Skillet

Ingredients

Smoked Sausage- For this recipe, I photographed the dish with a widely available Kielbasa sausage. However, any fully cooked sausage will work. You could substitute for andouille sausage, polish sausage, chicken sausage, or even turkey sausage. You will likely have a nice variety to choose from at your local grocery store.

New Potatoes- These are just small potatoes which are harvested before they are fully mature.. They are sometimes called creamers or baby potatoes. You can use red potatoes or yellow potatoes. If you wanted to change it up, you could also use a sweet potatoes.

Substitutions

Potatoes and Sausage are the base of this great meal. You can use this technique and change it up and use a different veggie like brussels sprouts.

How to Make it Smoke Sausage, Potatoes, and Green Beans

Step 1

Starting the potatoes and green beans in the microwave to make sure that they finish cooking at the same time as everything else. 

  • Wash potatoes and cut into one inch pieces. Depending on what size creamer potato you bought, this could be halves, quarters, or eighths. 
  • Place them in a microwave safe bowl, cover with a damp paper towel, and microwave for 3-4 minutes.
  • Repeat this process with the cleaned green beans. Add a few tablespoons of water or chicken broth to the bowl, cover with plastic wrap and microwave for 4 minutes.

Step 2

  • Next, heat a large frying pan on medium heat.
  • Slice smoked sausage into rounds and place into the skillet to brown.

Step 3

  • Then, add a drizzle of olive oil to the pan and add the par-cooked potatoes and green beans.

Step 4:

  • Next, add the diced red bell pepper and diced yellow onion.

Step 5

  • Finally, season with salt, pepper, granulated garlic, and paprika.
  • Let the sausage, potatoes, green beans, and veggies cook together until the potatoes are soft and the onions are translucent. It takes approximately 10 minutes.

Diana's Tips For Success

I used a 12" skillet to make this recipe. Make sure you use a large flat pan to have as much cooking area as possible. The more evenly you can spread out the ingredients, the more evenly everything will cook. 

Reheating and Storage

Leftovers can be stored in an airtight container for up to 5 days.

This sausage and potato skillet is great as leftovers, and reheats great in the microwave.

What to Serve with Sausage, Green Beans, and Potatoes

This really is a complete meal with main ingredients and side dish all in one. However, I usually like to make up a fresh salad like this Lemon Arugula Salad with Parmesan or an Italian Chopped Salad.

  • 12" Skillet

Ingredients

  • 14oz Package Kielbasa any fully cooked sausage
  • ½ Yellow Onion diced
  • 1 Red Bell Pepper diced
  • 1 Pound Creamer Potatoes cubed
  • ½ Pound Green Beans cleaned, and halved
  • 2 Teaspoons Paprika
  • 2 Teaspoons Granulated Garlic
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper

Instructions

  • Wash potatoes and cut into one inch pieces. Depending on what size creamer potato you bought, this could be halves, quarters, or eighths.
  • Place them in a microwave safe bowl, cover with a damp paper towel, and microwave for 3-4 minutes. They will not be completely cooked through, but will cook on the stovetop much quicker from this point.
  • Next, heat a large skillet on medium-high heat.
  • Slice smoked sausage into rounds and place into the skillet to brown.
  • Then, add a drizzle of olive oil to the pan and add the par-cooked potatoes and cleaned green beans.
  • Next, add the diced red bell pepper and diced yellow onion.
  • Season with salt, pepper, paprika, and granulated garlic.
  • Let everything cook together until the potatoes are soft and the onions are translucent. It takes approximately 10 minutes.

Notes

  • Cut the sausage at a slight angle to make a larger surface area. 
  • Par-cook the potatoes in the microwave to make sure that they finish cooking at the same time as everything else. 
  • I used a 12" skillet to make this recipe. Make sure you use a large flat pan to have as much cooking area as possible. The more evenly you can spread out the ingredients, the more evenly everything will cook. 
  • You can use a variety of sausage for this dish and get great results. Look for sausage with smooth textures and smoky flavors. 
  • This dish is great as leftovers, and reheats in the microwave without losing the texture or flavor.
