FAQs
This is mostly a matter of preference as Salmon can be cooked with the skin on or off. The skin can taste a bit more oily and fishy. When cooked with the fillet, it will leave those oils and fishier tastes behind. Many people enjoy the flavor you get cooking the salmon with the skin on. Buying skin-on fillets can be a bit less expensive. Once cooked the meat will come away from the skin with a fork or spatula.
If you find you don’t like the taste of the skin, you can usually find fillet pieces that have already had the skin removed. You can also use a fillet knife to remove the skin yourself.
Salmon needs to reach 145° at the center. Ideally the outside of the fish will be opaque and pinky while the center remains a brighter pink color. The fish should flake apart easily with a fork and be moist.
