Roasting carrots is a simple way to create a beautiful, healthful side dish for any occasion. These Roasted Glazed Carrots are no exception with the beautiful sweet and spicy glazed baked on to delicious, tender carrot halves.

The glaze is made from olive oil, honey, and spices. The sweet heat is offset by just a touch of saltiness to tickle all of your taste buds.

Roasted Glazed Carrots

The high heat from roasting creates beautiful honey glazed carrots.

Roasting is so simple! Five minutes of prep, and you are free to do other things. 

This recipe can easily be made for 2 or 20. Portion about one and half carrots per person.

This brightly colored dish is eye-catching as well as tasty.

These Roasted Glazed Carrots are great for weeknight dinner or any holiday table. Adding this dish to your holiday menu will add color and amazing flavor to the table without adding stress.

You will definitely impress if these are on your Thanksgiving Buffet!

Ingredients

Carrot- Try to choose larger, more uniform sized carrots for this recipe. A uniform size will help ensure that all of the carrots are finished cooking at about the same time. 

Instructions

Step 1

  • Preheat the oven to 400°. Line a sheet pan with foil or parchment paper. 
  • Scrub carrots clean under running water. Then, peel each carrot from end to end. 
  • Then, cut them in half lengthwise, and lay them on the sheet pan.

I sometimes find these beautiful rainbow carrots at the store. They are often found at farmers markets and around the holidays.

Step 2

  • Mix olive oil, honey, and spices together in a microwave safe bowl. Heat the glaze in the microwave for 10-20 seconds to make the honey really runny and easy to spread. 
  • Drizzle the glaze over the carrots and toss using tongs or your hands.

Step 3

  • Pop in the oven! After 20 minutes, each carrot over to the other side. Let them cook for 20 more minutes. 
  • Use a fork to make sure they are fully cooked and tender.
  • Remove from the oven and serve alongside your favorite Main Dish.

FAQs

Do you have to peel carrots?

Unpeeled, clean carrots are perfectly healthy. However, the peels can be slightly bitter, and they look more attractive to eat when peeled. Either way, wash well to remove dirt and debris before cooking.

Expert Tips 

Roasting means cooking with higher heat. Large pieces will brown and stay firm without drying out.  

A little olive oil will prevent dry burned edges. You should coat the carrots very well before putting them in the oven. 

A little fat also enhances the flavor of these Roasted Glazed Carrots and everything else you cook.

If you oven has hot spots, you may want to turn the pan around at the same time you turn the carrots.
